Our Favorite Recipes

QUINOA BLACK BEAN BREAKFAST BURRITO
Scramble 1 egg, add salt and pepper, fry in a little olive oil
Remove from heat
Cut up the scrambled egg in the pan
Add diced tomatoes, diced green peppers and diced onions
(use equal amounts of each)
Dice a “quinoa black bean patty”(see recipe below)
Combine with the scrambled egg, tomatoes, peppers and onions
Put everything in a large tortilla
Add cheddar cheese, if desired
Wrap up your burrito
Warm the breakfast burrito in the toaster oven before serving
(Makes 1 Serving)

QUINOA BLACK BEAN PATTIES
Olive oil
1 cup red bell peppers, diced
3 cloves garlic, minced
1 cup of diced onions
1 cup fresh cilantro leaves
1 can black beans, drained
3 cups quinoa cooked in chicken broth
1 egg, beaten
1 cup bread crumbs
Salt and pepper, to taste

Heat some olive oil in a skillet, add red pepper and sauté until slightly soft. Add the garlic and shallot and sauté until soft. Remove from heat. Combine with 1 can of black beans and fresh cilantro. Add to the food processor (I use my Vitamix) and blend until chunky (not pureed). Blend the mixture with the cooked quinoa. Add salt and pepper to taste. Add 1 beaten egg and mix well. Add 1 cup of bread crumbs and mix well.

Divide it into 6 small patties and refrigerate for 30 minutes. Dredge in more breadcrumbs, if desired, and then pan fry in olive oil, about 3-5 minutes on each side (depending on the thickness of your patty). (Makes 6 servings)
